The Akumal Foodie – Poblano Chicken

Poblano Chicken

Ingredients:LolHa Poblano Chicken

  • 1 chicken breast
  • 40 g manchego cheese
  • 30 g Sausage “chorizo”
  • 40 g roasted poblano chile
  • Panko
  • 1 Egg
  • Oil
  • Salt and pepper

Sauce:

  • Walnuts
  • Brown Sugar
  • Evaporated milk
  • Cream cheese
  • Cinnamon

Making the dish:

We start by cutting our chicken breast into cutlets and marinate them for 15 minutes.
For the stuffing , we roast the poblano pepper in an oven, or on open flame directly until the skin starts to fall off. Steam chile in a bag and remove skin and remove the seeds also and cut into strips.

Manchego cheese is cut into sticks and chorizo is previously is cooked. Once ready, stuff the breast with the cheese, chorizo, and poblano strips . Roll to close and use a pair of tooth picks so that chicken does not open while cooking.

Coast chicken by passing it through flour, seasoned egg, and then panko.
In pre heated oil, fry until golden brown.

For the sauce, mix all ingredients in a blender .

To serve: Cut the chicken breast on the diagonal and cover in our Walnut Sauce. Accompany with rice and vegetables of your choice.
