Fried Sweet Milk

Fried Sweet Milk - Taverna AkumalIngredients:

  • 1 quart whole milk
  • 3/4 cup flour
  • 3/4 cup sugar
  • 4 eggs, beaten
  • 2 egg yolks, beaten
  • lemon zest
  • breadcrumbs (Panko is good)
  • vanilla bean
  • Canola oil

Procedure:
Boil the milk, then slowly add the flour.  Stir with a wooden spoon making sure that the mixture doesn’t clump.  Then add the sugar, the lemon peel, vanilla bean, and 4 eggs.

Continue to stir over low heat til you have a fairly dense cream.   Remove from heat and spread the cream on a large, oiled plate and let cool.  Remove the lemon peel.

Once the cream is cooled and solid, cut it into pieces. Then, dip the cut pieces in a bowl of beaten egg yolks, roll in breadcrumbs, and fry in hot oil until golden.  Drain on paper towels and dust with powdered sugar before serving.
