This month’s Akumal Foodie dish is thanks to Akumal’s new Italian restaurant, Taverna Akumal.
You may be thinking Spaghetti? But before you dismiss this, read the next part: alla Checca. Checca is a simple but scrumptious topping made with tomato, basil, and mozzarella (and a bunch of other great stuff). Don’t pass this one up, it is tasty!
On to the dish
Spaghetti alla Checca (serves 4)
Ingredients:
- 1 lb spaghetti pasta
- 2 garlic cloves, minced
- 8 leaves of basil, chopped
- 4 basil tops
- 12 oz of cherry tomatoes, halved
- 6 oz fresh mozzarella cheese, diced small
- 4 oz Parmesan cheese, grated
- 4 Tbsp Extra virgin Olive oil
- Salt and Fresh Cracked black pepper
Method:
In a large bowl add garlic, chopped basil, tomato, mozzarella, oil, salt and pepper.
Cook spaghetti in abundant boiling salted water, until “al dente”
Toss pasta in the bowl as a salad.
Plate pasta and finish with parmesan and basil tops.
*Editor’s Note: The tomatoes and oil are a big part of what makes this dish great, so find the best cherry tomatoes you can and use high quality extra virgin olive oil.
